Medium straw color with intense honey comb and jasmine notes, backed with coconut and lychee aromas. The ripe palate expresses tropical nuances and nectary fruit profiles. The finish is juicy and backed with elegant French Oak and silky Tahitian vanilla flavors.
This wine is an excellent aperitif and exceptional with sashimi dishes like warm Hamachi with daikon and ginger, or green tea leaf steamed bass on a bed of jasmine rice with soy infused seaweed.
This Viognier comes from the Vista Verde Vineyard located in the hills just north of the Pinnacles in San Benito County. The grapes were hand-picked, whole cluster pressed and cold fermented in small French Oak barrels. This wine has undergone partial malo-lactic fermentation and was aged Sur Lies for 9 months.
